Initially, I planned to have oatmeal topped with sliced bananas for my breakfast, but the summer heat only sped up the ripening process of bananas. Left with 4 over ripe bananas, the first thing that comes to mind is to bake banana cupcakes! Hmmm, they tasted so soft and fluffy and moist! Yum~

ingredients
- 3-4 ripe bananas, mashed
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- pinch of salt
- 1 1/2 cups all purpose flour
method
- preheat oven to 350F
- in a large mixing bowl, mix butter into mashed bananas with a wooden spoon
- mix in sugar, egg, and vanilla
- mix flour, salt, and baking soda together, add into banana mixture.
- pour into 4x8in loaf pan, or into cupcake liners
- bake for 40 minutes or until golden brown and a toothpick inserted comes out clean
- cool on a rack
