Banana Muffins



Initially, I planned to have oatmeal topped with sliced bananas for my breakfast, but the summer heat only sped up the ripening process of bananas. Left with 4 over ripe bananas, the first thing that comes to mind is to bake banana cupcakes! Hmmm, they tasted so soft and fluffy and moist! Yum~


Recipe 


ingredients

  • 3-4 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 1/2 cups all purpose flour

method

  • preheat oven to 350F
  • in a large mixing bowl, mix butter into mashed bananas with a wooden spoon 
  • mix in sugar, egg, and vanilla
  • mix flour, salt, and baking soda together, add into banana mixture. 
  • pour into 4x8in loaf pan, or into cupcake liners
  • bake for 40 minutes or until golden brown and a toothpick inserted comes out clean
  • cool on a rack
