You are loved




To celebrate our 3½ years of being together, I baked a classic lemon cheesecake for us. It was my first time attempting to bake a cheesecake, and I can happily and very proudly say, I succeeded! I scaled down the recipe to about 1/4 since I used a 4-inch heart spring-form pan, and still had enough mixture for 2 cheesecakes. The first, I kinda messed up, so the top of the cake browned too much, but the second cheesecake had a nice golden brown to it. I didn't bother decorating the second cheesecake since we couldn't wait to gobble it all up! So glad that Joe loved the cheesecake (he usually doesn't like desserts)!
